Who loves bacon?! Here at Brickell Living we’re big fans! We were in hog heaven when Miami Smokers had their pop-up in Brickell over the summer and though we are sad it’s gone, we have no problem heading over to Little Havana to see their newly renovated spot.
Miami locals James Bowers and Andres Barrientos saw a need for better bacon and became determined to fill it. Fast forward a few years later and they have completely found their niche. James and Andres both worked for Aaron’s Catering before they decided to get into the bacon business. After a trip to Tenneesee to learn about pork first hand from the King of Pork, Allan Benton of Benton’s Country Hams (that’s where many of the countries top chefs get their bacon from) they came back home ready to make their mark.
Located in Little Havana, Miami Smokers is an Urban Smokehouse serving a delicious menu of not just bacon – but sausages, porchetta, and classic lechon. Their curing and smoking methods are honor time tested techniques that solely rely on salt, smoke, temperature/humidity control, and never use nitrites. They work hard to source local and sustainable products, including pigs raised with no antibiotics or hormones, that are allowed to graze in pastures, and are fed a wholesome all vegetarian diet. They want the best for every product they produce. They are supplying their products to restaurants all over the city including everyone’s favorite donut shop, The Salty Donut – Hello, Maple Bacon Donut!
We stopped in shortly after they finished their much needed renovation and expansion after appearing on Food Network’s Diners, Drive Ins, and Dives to check out some of their classic menu items. Among our favorites were the Havana Club – lechon, swiss, spicy mayo, avocado puree, steak-cut bacon, frise, and ripe tomato served on toasted sourdough bread and the Mama T’s Spicy Thai Sausage – thai sausage, spicy mayo, cilantro, pickled relish, crush nuts, ‘lil bit of heat piled high on a baguette.
With a menu featuring over 15 sandwiches – don’t worry, there’s a salad on the menu too – it’s hard to pick one! Pro tip: Add an order of Bacon Wrapped Plantains to your order, you’ll thank us later.
Miami Smokers is now available in two locations at the American Airlines Arena. But they aren’t stopping there, James and Andres have big plans for their future – the ultimate goal is to get their meats in grocery stores all over the country and we are big believers that they can do it!
